This song remembers the fire at Notre Dame, equating its immolation with the attacks on democracy in the United States. The title comes from Joni Mitchell's line, "Don't it always seem to go that you don't know what you've got till it's gone." Leonin and Perotin, masters of the Notre Dame school of composition, are quoted at the beginning.
